Texas Caviar

This is a great go to recipe when having friends over or just to keep in the fridge for a snack!

3 cans of black eyed peas, rinsed
1/2 cup green onion, chopped finely
1/4 cup red bell pepper, chopped finely
1 tablespoon garlic, minced
salt and pepper to taste
4 tablespoons red wine vinegar
3 tablespoons extra light virgin olive oil
1 tablespoon cilantro

Mix all ingredients together and let all the flavors marinate for a couple of hours in the fridge.

Serve with corn chips!
